BBQ and hot sauce seem to be a marriage made in heaven (or hell as you prefer). I’ve never considered how it would be to make some hot sauce from scratch. Until now. The ring stinger hot sauce was born out of the pickled jalapeno peppers I made a couple of weeks ago. I was totally surprised how easy it is to make a decent hot sauce. So what are you waiting for? Start smoking and pickling some peppers and make yourself this bloody easy “Ring Stinger hot sauce”!

Homemade hot sauce
Making hot sauce from scratch is a lot easier than I ever imagined it would be. All you need is some decent hot peppers, a good vinegar based pickling juice. When you have a decent basic recipe you can experiment at your own taste. I explained the steps for the pickled jalapeno peppers over here. For the Ring stinger hot sauce I made an extra batch using home smoked jalapeno (aka chipotle). When you stick to the recipe you will end up with a hot sauce tasting way better than most (not all) of the commercial sauces. The star anise makes the and acidic pickling juice bring a lot of depth to the end result. Besides the heat you will find an explosion of flavours only using a couple of ingredients.
Ring Stinger Hot Sauce
The Ring stinger hot sauce is made with homegrown Jalapeno turned into chipotle peppers. I found out the homegrown jalapeno brings a lot more heat than those you buy in stores. Since this hot sauce has not much hasn’t been reduced much the heat was a bit overwhelming for regular usage (it was even hotter than a carolina reaper based sauce I tried earlier). I feared some real ring stinging pains and reduced the heat with some extra ingrediënts. When using storebought jalapeno peppers you can skip or reduce the amount of ketchup (twist the heat at your taste). Besides the heat the interesting smokey taste brings a little bit extra flavor to the end result! Definetely worth giving it a try!

Making hot sauce from scratch might be easier than you think. This Ring stinger hot sauce made from pickled homegrown smoked jalapeno peppers (chipotle) brings a lot of depth besides the ring stinging heat. Find out how to make it and get creative with your own version
- 1 jar pickled chipotle peppers Recipe in instructions below
- 3 tbsp ketchup at taste depending on the peppers heat
- 3 tbsp Lemon syrup or limoncello recipe link in instructions
Once you smoked the peppers you can follow the pickling process mentioned here.
After a week you mix the pickled chipotle (smoked jalapeno) and add some of the pickling juice to get a sauce instead of a paste.
Taste the sauce you have. Watch out! It can be damned hot (especially when using homegrown peppers). To be eatable I added 3 Tbsp. of ketchup to reduce the heat. But you can add less when desired.
Add 3 Tbsp. of lemon syrup find out how to over here. If you don’t want to make syrup you can add some limoncello too (I will share my recipe later on)
Taste and add more ingredients until you get the desired combination.
